Raw animal food stored over/not properly separated from ready-to-eat food. In walk in cooler, bowl of raw pork on shelf above multiple prepared foods. Manager removed pork to separate area.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In FRONT HOT CASE - spinach pastries (98F - Hot Holding); cream cheese empanadas (99F - Hot Holding); ham croquettes (96F - Hot Holding); pizza empanada (97F - Hot Holding). Per manager, all items prepared today and in unit from approximately 10:00am. Manager removed to oven to reheat and turned up temperature to unit.
