Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed waffles mix (70 F - Cold Holding) at room temperature preparation table front counter. As per operator for less than one hour. Operator moved the product to a reach in cooler for rapid cooling.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed Sanitizer Bucket (Quaternary +400 ppm) next to hand wash sink front counter.
Handwash sink used for purposes other than handwashing. Observed ice cream residue inside of hand wash sink front counter. And observed a towel inside of the hand wash sink located next to prep sink.

No paper towels or mechanical hand drying device provided at handwash sink at preparation area.
No quaternary chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths.
