Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Sanitizer reading of the dish machine was at 25ppm chlorine. Manager is setting up the 3-compartment sink to use properly till the dish machine is looked at.
Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw beef stored over mix vegetables in the walk in cooler and raw chicken over pork carnitas, operator rearranged the shelves.
Toxic substance/chemical improperly stored. Observed a bottle of cleaner next to limes on the bar, operator moved the cleaner.
Handwash sink not accessible for employee use at all times. Observed hand wash sink in the kitchen next to the 3-compartment sink was blocked by 8 containers, operator moved.
Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed in the walk in cooler a pan of shredded chicken, shredded beef and ground beef that were made last Tuesday and Wednesday and not date marked, operator had employee date marked.
Required employee training expired for all employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed all employees training is expired, the operator showed me.

Observed two tilapia on the prep table thawed in the package and observed nine individual pink salmon in the walk in cooler thawed out in the package, operator discarded. Stop sale.
