Operator called during time of inspection to have dishmachine serviced.

In cooler on cookline across from freezer: Fish (47F - Cold Holding); raw chicken (63F - Cold Holding) second temperature 38F; Beef (55F - Cold Holding) second temperature 41F;sausage (50F - Cold Holding) temperatures were taken less than 4 hours ago per manager. All food was below 41F. Cooler was accidentally turned off. Manager turned on cooler and moved foood to freezer for rapid chill. Reach in cooler on cook line across from fryer: cooked potatoes (46F). Potatoes were at 40F less than 4 hours ago per manager. Manager states they may have been sitting out. All other food in cooler was at proper temperature. Reach in cooler in server station: butter (47F - Cold Holding), other items in cooler were below 41F. Manager states it may have been sitting out. Butter www moved to reach in freezer. Bar cooler: Milk 50F. Manager states no temperatures have been taken and milk has been in the unit since yesterday. See stop sale.
