Wiped down cutting board and handled knife, no handwash. Discussed with employee, employee properly washed hands before returning to work.
Employee handled soiled dishes or utensils and then picked up plated food, served food, or prepared a beverage without washing hands. Employee washing dishes, then began filling portion cups with butter, no handwash. Discussed with employee and person in charge proper handwashing techniques.
Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed employee washing dishes at triple sink, no sanitizer step used. Spoke with person in charge,
Raw animal food stored over/not properly separated from ready-to-eat food. Raw cold smoked salmon over ready-to-eat butter in reach-in cooler on cook line right. Discussed with operator that raw cold smoked salmon must be kept separate from ingredients used for other bagels or foods. Operator moved raw cold smoked salmon to bottom of reach-in cooler for proper storage. Repeat 3/6/2024.

Raw animal food stored over/not properly separated from ready-to-eat food. Raw shell eggs in large reach-in cooler in back storage over ready-to-eat deli meats, juice boxes, cooked sausage patties. Operator rearranged cooler for proper food protection.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On counter next to flat grill, sliced cheese (48F - Cold Holding); cooked pork sausage (48F - Cold Holding); ham (75F - Cold Holding); raw shell eggs (68F ambient - Cold Holding) for between one to three hours per operator. Operator placed all items in reach-in cooler for rapid cooling. Also butter (68F - Cold Holding) above cream cheese cooler in main cooking area. On front counter half and half (48F - Cold Holding); milk (50F - Cold Holding) for two hours per operator. Operator discarded these liquids.Provided operator with time as a public health control form and explained use.
Toxic substance/chemical improperly stored. Under bagel toasters, on counter next to grill, and next to register, by foods, single service cups and napkins. Operator separated the chemicals.
