Operator stated cheese portioned and sausage with potatoes cooked 2 hours prior to first temperature, at this rate portioned cheese will not reach 41F within 4 hours and cooked sausage with potatoes will not reach 41F within a total of 6 hours, moved to double glass door reach in cooler to facilitate faster cooling.
