Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On counter, near to cook line, Whipped Butter (78F - Cold Holding); Cream Cheese (61F - Cold Holding). Per operator, foods not prepped or portioned today. Foods held in reach in cooler and moved to counter and held for approximately 3 hours. Food was moved back to reach in cooler to quick chill. Emailed Time as a Public Health Control Form to manager.

Air gap between water supply inlet and flood rim of equipment/sink is less than one inch. Observed air gap in triple sink less than 1 inch. Operator cut line to make a 1 inch air gap.
No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. Observed 5 employees working and no Certified Food Manager on staff. CFM showed up during inspection.
