Establishment removed/covered/defaced closure sign posted by the division. Inspector observed establishment had covered the closure sign short after establishment had been closed. Covering removed by inspector. No one on site at that time. Prior to the callback the following day, the inspector observed the closure sign covered again, with the operator quickly uncovering the sign when he saw the inspectors car pull into the parking lot. Discussed with the operator regarding the covering of the sign.
Ordered shut on the spot. 15 violations recorded, 5 of them the tier the state says can make you ill. A reinspection is required before this kitchen may reopen.

Employee cleaned (vacuumed) up all of the droppings.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in reach in cooler near grill Lox (45F-48F - Cold Holding); Sliced cheese (45F-48F - Cold Holding); Hash browns (45F-48F - Cold Holding); Deli meat (45F-48F - Cold Holding); Cooked sausage (45F-48F - Cold Holding); Roast beef (45F-48F - Cold Holding). TCS foods over filled in containers. Cooler has an ambient temperature of 42F. Took second temperature of product in reach in cooler near grill and TCS foods are at 47F-49F. Employee will remove TCS items to another cooler.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked sausage at 81F-90F being held in steam well. Employee removed and reheated sausage.
