Spoke with operator regarding designated, operator to wash dishware in main kitchen until sanitizer tests properly.

Observed employee on cook line with gloves screw on cap after drinking then engage in food prep, no gloves change or hand wash. Spoke with employee, employee properly washed hands before resuming work.
