Operator stated less than 1.5 hour, operator placed product on ice for quick cooling. Observed cut tomatoes (41F - Cold Holding); cheese (42F - Cold Holding) before end of inspection.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed employee drinks above cook line and above salt and pepper in cabinet at server station. Operator moved for proper storage.
Silverware/utensils stored upright with the food-contact surface up. Observed spoons and forks stored with food contact surface up on back shelf near office area. Operator removed and placed for proper storage.
