Observed both cheeses stacked higher than the chill line of cooler. Employees removed excessive cheese and placed in bottom of reach-in cooler to chill.

Observed employee drop fruit on floor and another employee with gloved hands picked up fruit and proceeded to engage in food preparation. Inspector intervened and spoke to employee regarding hand washing. Employee removed gloves and washed hands properly.
