As per operator, ribs removed from walk in cooler 45 minutes prior to the inspection. Operator transfer ribs to walk in cooler. Observed pasta (48F - Cold Holding); cheese (45F - Cold Holding); in flip top cooler. As per operator, both items transfer to unit 2 hours prior to the inspection. Operator placed ice packs on items for quick chill.
