Observed Main make line cooler: cut tomatoes (55F - Cold Holding); heavy cream (66F - Cold Holding); cooked vegetables (64F - Cold Holding); house made dressing (66F - Cold Holding); chicken (46F - Cold Holding) less than 4 hours per person in charge. All products placed on ice.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed moray sauce dated 12/19 1400 (97F - Cooling) at 1545 person in charge placed sauce back on cook line to reheat to 165 and start the process over again. Sauce was in a very deep covered container.

Prep for dinner started at 1500 door does not close all the way. Person in charge had employees add items in ice, moved some items to freezers, and placed working products in beer walk-in cooler.
