Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishmachine chlorine 0ppm. Advised operator to set up 3 compartment sink to wash, rinse, sanitize all dishes until dish machine is repaired. Operator set up 3 compartment sink with chlorine sanitizer 100 ppm.

Per operator, not prepared or portioned today. Per operator, out of temperature for approximately 3 hours. Operator decided to use time control. Operator placed time stamp for remaining 1 hour. Time control procedure sent to operator.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. fried tofu (74F - Cooling) at 3:45 since 2:15 - 74F 4:05 Observed sitting out in container on cook line. At current rate of cooling product will not reach 41F within 6 hours. Operator returned to walk in cooler.
Wet wiping cloths used for occasional spills on equipment food- and nonfood-contact surfaces not clean. Observed resting on cutting board at cook line. Operator removed wiping cloth.
