Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Tested at 150ppm. Minimum strength for food contact surfaces 200ppm per product label. Operator made new solution, tested at 300 ppm.
A return visit. The problems were not fixed yet and the kitchen was given more time.
