Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw shell eggs stored over corn tortillas at walk-in cooler, staff relocated the eggs to bottom shelf, also provided educational material in food storage according to cooking temperatures.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed pico de gallo (54F - Cold Holding); raw bacon (55F - Cold Holding) at reach in cooler unit, as per person in charge for less than 4 hours, staff moved product to walking cooler for rapid cooling.
Handwash sink used for purposes other than handwashing. Observed apron stored inside handwashing sink, staff removed the apron.
Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Observed chlorine sanitizer 3 compartment sink and not test kit available.
