Raw animal food stored over/not properly separated from ready-to-eat food. Carton of raw eggs on top of packs of provolone cheese. Raw bacon over cake and sliced turkey. Items rearranged appropriately at time of inspection.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On counter: sausage 81F, raw shell eggs ambient temp 63F, per operator items pulled out approximately 30 minutes prior. Sausage returned to cooler. Operator began using time as a public health control for eggs. Eggs marked for time during inspection. Provided written plan to operator during inspection.
