Cooler has an ambient temperature of 39F. Employee removed from reach in cooler. Observed in reach in cooler across from pizza oven Cut sausage (49F-56F - Cold Holding); Sausage (51F-56F - Cold Holding); Cooked smoked chicken (51F-56F - Cold Holding). Employee removed and placed inside reach in cooler.

Observed employee engaging in food preparation touching personal phone with gloved hands and proceeded to engage in food preparation. Manager intervened and spoke to employee regarding hand washing. Employee removed gloves and washed hands properly.

Cooler has an ambient temperature of 41F.
