Manager or person in charge lacking proof of food manager certification. The manager on site, Huyen Ngo, only has the principles training certificate and not the certified food manager certification.
Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Containers of butter cream dated 3/14 and Krab ragoon mix dated 3/26 in reach in cooler in prep area. Per manager all items were taken out of freezer the day before for the first time.
