Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed swai on cookline at 57F, operates states it was just put in the reach in cooler on the cookline across from the grill for less than 1 hour, operator placed a bag of ice on the fish and moved it into the walk in cooler.

Observed employee garnish a drink by grabbing a lime with bare hand and placing on the rim of the glass, counseled operator regarding bare hand contact, operator discarded beverage.
