Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishwasher machine at bar at 10 ppm. Operator utilizing triple sink until unit is serviced.

Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed sanitizer bucket under table at cook line 500ppm. Employee made new bucket 400ppm.
Handwash sink used for purposes other than handwashing. Observed employee add water to sanitizer bucket at kitchen hand wash sink. Inspector spoke to employee and moved to triple sink.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed no test strips for chlorine dish machine. Quart test strips for sanitizer bucket were wet and no longer useable.
Raw/undercooked animal food offered and establishment has no written consumer advisory. Raw animal foods must be fully cooked prior to service. Operator stated they serve hamburgers under cooked. No consumer advisory. Inspector provided operator with copy and he posted.
Equipment in poor repair. Observed gasket on stand up reach in freezer, next to ice machine has gasket separating from door
Floors walls and/or ceilings soiled/has accumulation of debris. Observed debris on floor beside ice machine by back door to kitchen.
In-use knife/knives stored in cracks between pieces of equipment. Observed 2 knives stored between prep table and flip top cooler. Employee moved knives.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed fan on wall by reach in cooler across from hand washing sink has dust buildup.
Outer openings not protected with self-closing doors. Observed missing door closer to door leading to outside dining area.
Single-service articles improperly stored. Observed coffee filters stored in drawer at bar beside a first aid kit. Operator moved filters.
Standing water in bottom of reach-in-cooler. Observed standing water in beer cooler behind bar.
A return visit. The problems from the previous inspection had been dealt with.

Raw animal food stored over/not properly separated from ready-to-eat food. Raw pooled shell egg stored over ready to eat items in reach in cooler. Also, raw sausage stored over intact meat. Person in charge moved to appropriate location.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Butter pats left out at room temperature at 75F. Cupcake made with butter cream homemade at 76F at room temperature. Recommended holding on time, emailed operator time paperwork during inspection.
