Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution spray bottle. Operator uses sink and surface for food contact surfaces. No test kit available at time of inspection. Operator removed sink and surface sanitizer from truck.
Mobile food dispensing vehicle license number not permanently affixed on the side of the unit in figures at least 2 inches high and in contrasting colors from the background of the vehicle. Educated operator on proper size and color contrast of license number.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At Upright stainless; cooked potato fries (46F - Cold Holding); cooked chicken (46F - Cold Holding). Operator stated not prepared or portioned today, held out of temperature control for less than 2 hours prior. Advised Operator to maintain temperature at 41F or below.
