Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in the upright cooler at kitchen cheese (51F - Cold Holding); hot dogs (45F - Hot Holding); beef tacos (50 F - Cold Holding); cooked rice (53F - Cold Holding), as per owner cooler was 38F, she also stated that an employee was cleaning the cooler and the door was opener for sometime. Instructed employee to keep the cooler door closed and add ice to food products to rapidly cool it down.
