Employee touched soiled surface and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed employee taking customer payment. Employee then removed hot pretzels from baking sheet, when picking up each one with tongs, held the pretzel with tongs and used bare hands to support the weight of the pretzels when putting in front holding case. No handwashing done after customer payment and before touching baked pretzels.

Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Gallon of milk and opened package of shredded cheese in front reach in cooler has no open date marked. Per employee, both opened yesterday morning. Employee added correct date to both products.
