As per operator, item was removed from the refrigerator approximately 1 hour ago to defrost. Operator placed into the cooler to quick chill.

In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed at cook line. Water room temperature 87F. Operator cleaned, sanitized, and stored in constantly heated water above 135F.
