On center prep table, roasted garlic butter (87F - Hot Holding) per operator microwaved periodically to maintain temperature. Discussed with operator use of time as public health control as alternative, provided for.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. No bodily fluid clean up kit or written procedures available. Inspector provided written procedures.

In the walk in cooler, chicken wings date marked with the date cooked and frozen 2/24 but no date mark for when pulled to thaw in Monday. Employee added date marker.
