Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dish machine testing at 10ppm. Operator set up manual sanitizer in three compartment sink. Operator replaced with new bucket of chemical and primed through now testing at 100ppm.
Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw shell egg mixture over washed carrots and pasteurized eggs. Operator moved for proper storage.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed no chemical test kit for dish machine.
