The operator explained that they use the container to collect water after washing their wands, allowing the water to accumulate before disposing of it in the three compartment sink. The operator stated this practice is due to a plumbing issue causing the drain on the cook line to back up. The container was removed from the sink, and when the inspector ran water, it was observed that the drain on the cook line was backing up.
