Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. At hot box- Cooked ribs 125F- hot holding- food out of temperature for 30 minutes- as per operator- left out on counter- operator placed on stove to be reheated on stove.
Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink. At handwash sink water 70F - operator corrected to 85F.
