Food-contact surface soiled with food debris, mold-like substance or slime. Can opener blade is soiled with old food. The can opener was removed to the triple sink.

Coleslaw, macaroni salad and potato salad in the coke cooler were labeled with name only. The containers were removed to the walk in cooler.

The meats were reheated and placed in the box less than 4 hours ago. The meats were removed to be reheated to 165F to hot hold.

Gyro meat on cone initially cooked longer than 60 minutes was cooled prior to being fully cooked. See stop sale. Observed left over gyro meat on cone held overnight inside walk in cooler. Leftover cones cannot be cooled intact and re-used because the raw animal food has been subjected to more than sixty (60) minutes of cooking. Any cone left must be sliced, fully cooked and properly cooled. Sliced gyro meat must be cooled in an approved method (e.g., uncovered, shallow pans no more than 2" to 4" deep) to allow for proper cooling. All heated time/temperature control for safety foods must be cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F within a total of 6 hours. Manager discarded
