No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels inside restroom.
Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed ahi tuna steaks still in ROP packaging defrosting in container in ambient temperature, STILL FROZEN. Coached operator on proper ROP defrosting methods. Operator took ahi out of ROP packaging and placed inside walk in cooler.
Cutting board has cut marks and is no longer cleanable. Observed excessive cut marks on cutting boards on prep table.
Ice buildup in reach-in freezer and/or walk-in freezer. Observed ice buildup up in reach in freezer.
Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed soiled interior of oven by cook line. Observed soiled interior of microwave.
