Employee switched from working with raw food to ready-to-eat food without washing hands. Observed employee handle raw beef and then handle ready-to-eat roll without changing gloves and washing hands. Roll reached 109F. Employee decided to re-make sandwich instead of heating bread to 155F. See stop sale. Employee removed gloves, washed hands, and put on new gloves. Discussed proper procedure with employees.
