Manager using cellphone while bagging food and then handled tongs to bag food. Hands were not washed after using cellphone. Educated manager on site to wash hands after using cellphone and before handling food items.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. hash browns (111F - Hot Holding). Out less than four hours. Instructed operator to reheat to 165F.
