Raw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer. -Observed raw chicken nuggets stored over onion rings in reach in freezer and raw chicken stored over burger patties. Operator removed and stored properly.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. -Observed cooked eggs hot held at 122 degrees Fahrenheit at prep station. Per operator, eggs cooked 1 hour prior to the inspection. Advice operator to reheat eggs to 165°F.
Employee with ineffective hair restraint while engaging in food preparation. -Observed female employee with long hair engaging food preparation.
Light shield damaged/in disrepair. -Observed light shields missing in storage area.
