Raw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer - not all products commercially packaged. Observed raw fish stored with raw chicken in chest freezer next to three compartment sink.

Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed in walk-in cooler cut tomatoes (51-68F at 11:10 - Cooling since 8:45). Items were being cooled in covered plastic containers which were stacked on top of each other. PIC removed lids and placed tomatoes in walk-in freezer to rapid cool. Second temperature 48-54F at 11:32.
No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses.
