Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. raw bacon (49F - Cooling) at 2:20 since 11:30 - 50F at 2:35 Observed pan of wrapped sets of bacon at walk in cooler. At this rate of cooling product will not reach 41F within 4 hours. Operator moved to walk in freezer to quick chill.

Food stored in a location that is exposed to splash/dust. Observed stored sandwich buns in sealed bags on bun rack with water dripping onto sealed buns from air conditioner unit. Operator removed water from sealed bags and changed location of bun rack.
Plumbing system in disrepair. Observed hand washing sink with plumbing pipe removed due to leak. Per operator, work order for repair of hand sink has been submitted.
