Establishment has no approved Alternative Operating Procedure. Employee at cookline removed fries from the fryer, spread them on a pan, then touched the fries with his bare hand in several areas. Inspector had employee place the fries back into the fryer to heat to 145F. Employee heated the fries to 198F.
