Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. In tall reach-in cooler across from dish area, container of opened ricotta not date marked. Per operator, ricotta had been opened the afternoon prior. Operator date marked.
In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. In dry storage, bulk container of potato starch has handle of scoop in starch. Operator moved scoop.
Single-service articles not stored inverted or protected from contamination. In hallway across from drink station, multiple Togo boxes and Togo lids not inverted. On shelf across from pizza station, stacks of Togo boxes and Togo lids not inverted. Operator inverted all lids and boxes.
