At walk in cooler- Cooked broccoli 60-64F at 1:35 to 60-64F at 1:55 ( cooling since 11:30) - food covered- at current rate of cooling food will not reach 41F within remaining 1.5 hours- operator uncovered and moved to reach in freezer.
