Observed chlorine sanitizer concentration 0 ppm. Dishes were inside the machine at the time of the inspection. Owner adjusted the sanitizer concentration to 50 ppm.
Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed dishes inside dishwasher machine with chlorine sanitizer concentration 0 ppm. Owner adjusted the sanitizer concentration, so chlorine sanitizer 50 ppm.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed 54 F - Cold holding ); chicken stock (65 F - cold holding ); bacon (46 F - Cold Holding), heavy cream (72 F - Cold Holding). As per cook, for less than 4 hrs. Food was moved to reach in freezer and some items placed inside ice bath.

Chemical test kit not used to ensure proper sanitization of equipment and utensils when using a chemical sanitizer. As evidence of dishwasher machine was not sanitizing properly. Owner adjusted the machine to chlorine 50 ppm and tested it.
