On ice at cookline: Three packages of salmon, five packages of grouper, two packages of mahi, and six packages of snapper thawed inside reduced oxygen packaging. The fish is completely thawed. The packages do have a label indicating the fish must be removed from packaging prior to thawing. Inside walk-in cooler: Four five-gallon buckets containing salmon, grouper, mahi, and salmon thawed inside reduced oxygen packaging. The fish is completely thawed. The packages do have a label indicating the fish must be removed from packaging prior to thawing.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Inside cooler at cookline: scallops (57F - Cold Holding). Employee stated the scallops have been held in the cooler for approximately one hour and added ice to the product to rapidly cool it to 41F.
Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. Fried okra, hush puppies, and fries indicated ad being held using time instead of temperature and held at cookline missing time marks. Employee at cookline stated all items have been held at room temperature for 10 minutes and added the proper date marks during this inspection.
