Displayed food not properly protected from contamination. Iced tea urns have no covers. Operator covered urns.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked meatballs (101F - Hot Holding). Per operator, meatballs have been holding for forty minutes. Operator put meatballs in microwave oven to reheat fully.
