Employee cracked raw shell eggs then change gloves and handled a clean scoop without washing their hands. Employee removed the scoop to be sanitized, washed their hands and change gloves.

Interior of the dip well in the back preparation area soiled and in use. Manager removed the utensils to be sanitized, washed and sanitized the dip well. Operator cannot prove it is non-tcs; item contains milk. Operator removed from service and hold in office until proof is provided to the department.

Temperature sanitation not reaching required temperatures to sanitize. Not turning strip black digital readout reaching 149F on wash and 180F for less than 1 second. Manager called repair at inspection.

Observed sausage crumble (50F - Cold Holding) operator states crumble in location for 3 hours and chose to discard and replace. Unit at 43F in lower area. Observed scoop handle may have been holding door ajar. Corrected.
