Operator realized the cooler was not turned on, turned it on and moved items to freezer to rapidly cool. cut tomatoes (50F - Cold Holding); shredded cheddar cheese (48F - Cold Holding); cut lettuce (47F - Cold Holding) Recheck tomatoes 39F; cut lettuce 31F; shredded cheese 36F
