Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed their triple sink at 100ppm quaternary. Operator remade it to 200ppm.
Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed black build up on their ice machine.
Bowl or other container with no handle used to dispense food. Observed single service cups used as scoops for cut vegetables in their make table. Operator removed them.
Employee personal food not properly identified and segregated from food to be served to the public. Observed employee personal food in the each in freezer not labeled. Operator labeled it and placed it on the bottom shelf.

Single-service articles not stored inverted or protected from contamination. Observed coffee filters not stored properly and observed to go boxes not inverted. Operator stored the filters and inverted the boxes.

No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed no chemical test kit for their quaternary triple sink.
No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed no proof of employee training.
No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Observed no signed agreements. Emailed operator the agreement.
Propane tank (larger than 2.7 lb. water capacity/1 lb. gas capacity) located inside of the building. For reporting purposes only. Observed a filled propane tank stored inside the building. Operator removed the tank.
