Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in the glass door upright cooler across from the fryer cooked pork (47F - Cold Holding); cooked pork belly (50 F - Cold Holding); raw chicken (50 F - Cold Holding), manager stated that he was reorganizing and cleaning the cooler, also stated that cooler was under 40 less than 1 hour ago. Instructed operator to transfer food to the cooler next to it to rapidly cool.

Observed cooked pork, cooked pork belly in ROP packaging without an approved HACCAP Plan. Owner stated that he was not aware of the ROP Division Polices. Owner removed and discarded all ROP packaged food and discarded it on site, he also site it that he wouldn't be doing ROP anymore.
