Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishmachine reading 0ppm chlorine after multiple attempts and priming.
Employee dried hands on clothes/apron/soiled towel after washing. Employee wiped hands on soiled cloth after dropping pan at dish station and returned to cook line without washing hands and changing gloves. Reviewed handwashing/glove usage with employee and employee washed hands.
Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. In walk in cooler, case of raw chicken on top of raw pork. Employee rearranged to properly separate.
