Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly at 0 ppm. Operator will call for service and will set up triple sink to sanitize. This is a non-operational inspection due to the establishment being in an extended period of not operating. Establishment must be in compliance with all applicable rules and regulations prior to reopening.
