Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. In the walk in cooler, Marsala (77F - Cooling) at 2:25 started cooling at 11:00. The sauce is being reheated to 165F to then cool according to the parameters.
