No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. Upon inspection, operator does not have measuring device to test surface temperature of hot water sanitizer. Provided operator with heat strips.
No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Operator unable to provide proof of employee food handler training.
Cutting board has cut marks and is no longer cleanable. Cutting boards throughout kitchen have deep grooves. Per operator, new cutting boards are already on order.
